Snowed In? Make Snow Ice Cream!

It’s been a mild winter here in the Granite State. We’ve had very few storms. Early last week, I looked out my window and noticed that there was green lawn visible beneath the snow patches. It was so strange…

… and then we got clobbered mid-week with a foot and a half of the white stuff.

In true New England fashion, we are about to get pummeled again. As I type, the storm is rolling in. We are anticipating at least another foot and a half with blizzard conditions.

My kids are over the moon about these back-to-back blizzards. The energy is high.

Meanwhile, the parents are struggling to secure child care, commute to work, and shovel the walkways.

Kids can’t help you with most of that, but they can help you shovel.

How to Make (Dairy Free) Snow Ice Cream

Today, I am sharing our family’s favorite snow ice cream recipe in hopes that it helps a fellow parent buried under the white stuff.

Ingredients:

  • 4 c. fresh snow ***
  • 1/4 c. coconut milk (full fat)
  • 1 tsp. vanilla extract
  • a dollop of maple syrup
  • your family’s favorite toppings (coconut flakes, chocolate chips, sprinkles, chocolate syrup- whatever makes your heart sing!)

***If your family is anything like mine, you’re going to want to double this recipe. Especially if you are getting clobbered with snow. Trust me, it helps.

Instructions:

  • When the snow starts to fall, grab a bowl and place it outside.
  • Once shoveling time rolls around, tell your kids to hurry! Quick! Grab a shovel! Get to work!
  • As kids grumble, promise them snow ice cream … with toppings.
  • Shovel together- many hands make light work!
  • Once the job is done, grab the bowl of fresh snow and head inside. Mix everything together and add toppings.
  • Enjoy!
